Made a carrot cake- cheesecake. Recipe here.
Instead I used a tried and true recipe and kept with the danish-esque filling. (I think adding pineapple makes it a hummingbird cake) also did it sans icing.
It tastes pretty delicious.
I think we have a birthday cake :)
